- Lunch: Leftover Slow-Cooker Italian Pork Roast with Whole30 compliant BBQ sauce and Simple Homemade Coleslaw
- Dinner: Quick Beef Pho
- Lunch: Leftover Quick Beef Pho
- Dinner: Krista's Quick and Easy Crab Stuffed Mushrooms but subbing leftover pork for the crab
- Lunch: Leftover Stuffed Mushrooms
- Dinner: Leaving this night open for something fun! I'm thinking I'll hit the grocery store on my way home from work for some seafood or a big steak.
- Brunch: Leftovers or eggs
- Dinner: Out to dinner for a friend's birthday!
The Whole30 is not about feeling deprived. It's not about eating bland "health" food. And it's certainly not about eating tiny portions and being hungry all the time. It's about eating nutritious, filling, health promoting food and so far it has been delicious :)

Ugh, the stupid weather!! But you just reminded me, I have an awesome pho recipe I've been meaning to make and put on the blog too!! Perfect for rainy days this week :) That slow cooker Italian pork roast is AMAZING!! If you haven't made it before (or even if you have), I'm excited for you!!
ReplyDeleteYes, that pork roast is definitely a Whole30 regular for me. It's so good! Looking forward to comparing your pho recipe. I've never made anything like it, but I love pho from a restaurant. I'm not sure how I feel about all the random veggies I'm going to dump in it... last time I brought my leftovers home and put a bunch of broccoli slaw in it and I liked it, but I still had some noodles left in there. I'm planning on using that again, but possibly adding some zoodles. We'll see!
DeleteGood looking meal plan! I did pulled pork in the slow cooker with Civilized Caveman's Beasty BBQ Sauce over a week ago and my husband is STILL asking me to make it again! Like it is to die for! Bonus points - the final product freezes really well!

DeleteWoo-hoo! Day 12 and this is awesome. Thank you so much for encouraging me to join you! I made a super rad pot roast last night. I'm going to make a barbecue sauce to toss the leftovers in, since they get so dry so fast. Also, I'm blessed that my neighbor makes an AMAZING chicken stock. I don't bother to make my own anymore, I just give him my chicken bones and he drops stock off. Perfect for the chilly mornings (yeah, 60 degrees is considered "chilly" here :) )
